Simple Summer Salmorejo

THE WHY BEHIND THIS RECIPE

I went to Spain earlier this summer and became obsessed with their salmorejo. It’s thicker and creamier than gazpacho (but no creme and less ingredients!). I’ve been making it on repeat ever since for every guest that has walked into my house this summer and the response I always get is…WOW. I love to serve this in a wine or cocktail glass at the start of the meal, it’s better than a cocktail! It takes less than 10 minutes to whip up in the blender and it tastes like summer.

WHAT YOU NEED

SALMOREJO
  • 3 very large or 5 medium tomatoes (preferably vine-ripened, heirloom tomatos, but I’ve tried with Roma and other kinds too and it’s delicious!

    • You are shooting for about 4-5 cups worth of tomatoes.

  • 3/4 cup bread or bread crumbs - I I recommend using @baseculture GF keto bread, but you can use any bread you have on hand!

  • 4 cloves garlic

  • 2 tbsp sherry vinegar or red wine vinegar

  • 1/2 english cucumber (optional, but I think it tastes EXTRA fresh with this included)

  • 1/2 cup olive oil

  • Heavy pinch of salt, taste taste taste to add more!

TOPPING IDEAS
  • Prosciutto (bake in oven at 400 for 10 minutes to get crispy)

  • Parsley or cilantro or any herb you want!

  • More olive oil

  • Green pepper or jalapeno

  • Flakey sea salt (MANDATORY)

HOW TO DO IT

  1. Add peeled garlic, sliced tomatoes, GF bread or bread crumbs, half a cucumber, red wine vinegar and salt into a blender or vitamix. Blend until smooth.

  2. Add 1/2 cup of olive oil, and pulse 2-3 more times. I try to avoid blending olive oil too much because the polyphenols can get distributed and cause the olive oil to have a little bitter taste.

  3. Serve in a fun bowl or glass! Top with a drizzle more of olive oil, parsley or cilantro, crispy prosciutto or any topping you’d like! It’s so stunning it can be served in place of a cocktail!

TRICKS:

  • Get the highest quality tomatoes you can find: With a recipe like this with minimal ingredients you will REALLY taste the quality. Opt for organic heirloom tomatoes if possible and high quality olive oil.
